"If you can read, you can cook"

This was one of the first things about Mr. T that caught my attention. It was his first social visit and the 1.5hrs just flew by as we chatted about topics ranging from food to ebikes to vapes to the World Atlas.

Mr. T is a widower and as he made us a coffee, I asked if he cooks for himself and he said, "Yes. I believe if you can read, you can cook". He went on to tell me how his time at a Dublin university and a French best friend, set the tone to him being self-sufficient and more importantly, able to follow recipes!

He had just made a chicken roast with all the trimmings, which will serve him for 6-7 meals. "Economical, good way to pass time and another opportunity to use your mind", he said.

His attitude is a thoroughly refreshing take on living life alone and not letting it defeat you. This includes not being too proud or stubborn to ask for help sometimes. Isn't that the truth!?

I came away thoroughly impressed with Mr. T's knowledge, intelligent mind and pragmatic approach to life. I told him he was an inspiration for me and I meant it :)
